Restaurant Inspections: Ruiz Gets a Lesson in Proper Sanitizing

Plus, the inspector visits McDonald's, Ryce Oriental Buffet and more.

Each week, Florissant Patch publishes information from the local restaurant inspections of St. Louis County Department of Health as well as their grade.

Here are some of the latest restaurant inspections from the past 90 days:

Ruiz Mexican Restaurant
Address:
901 N. Highway 67, Florissant
Date of Inspection: Oct. 8
Type of Inspection: Routine

Grade: 94-A
Comments: Facility was using degreaser for a cleaning and sanitizer solution. Degreaser is not allowed for cleaning food contact services. Discussed with the manager on how to properly clean and sanitize food contact surfaces with the correct chemical solution. Facility not able to provide hepatitis A vaccine documentation for all employees. Sanitizer bucket was tested at 0PPM. Sani-bucket was corrected to 400PPM. There is moisture accumulated inside the beer cooler at the bar and low reach-in cooler near the prep bar. Accumulated water needs to be removed from units. Observed damaged floor tiles in the kitchen. Damaged tiles need to be replaced.

Roberto’s Italian Restaurant

Comments: Sanitizer bucket was not set up in the kitchen. Employee made sani-bucket on-site and corrected the violation. The women’s restroom needs an enclosed trash can. Trash can needs to be supplied with a lid.

Comments: Food products stored on the floor in the walk-in freezer. Absorbent material (wiping cloth) being used to stabilize a cutting board. Heavy buildup of black mold like substance on the interior surfaces of ice machine.

Comments: Hand towel dispenser at line hand sink not working. Manager replaced batteries, corrected on site. Under counter reach-in coolers don’t have thermometers. Several damp wiping cloths not held in sanitizer when not in active use. Hand sink in the prep area has no hot water.
