What does it mean by risk factor 3 and risk factor 1?

Hey Matthew:

According to the St. Louis County Department of Health: Inspections are risk based. The inspector assigns a number between 1 to 4, with the number indicating the number of times per year a food establishment will be inspected. This is based on the extent of the food preparation, the type of food handling, and past performance at the food establishment.

If you have further questions about our inspections, check out this story we did a couple of years ago: http://florissant.patch.com/articles/inspecting-the-unexpected.

It should help with clarity. :)

How can a restaurant get a 100% on their inspections. When Employee restroom out of order; incomplete Hepatitis A record; employee drink cup stored next to food items?

Here's why first employee bathroom. Employee bathrooms are not required in restaurants therefore not required for 100%. In DeLeos case the light bulb in the bathroom was burned out. Incomplete Hep A records are because new hires have 30 days to provide proof and the drink cup is a clean cup that was inadvertently placed on a shelf next to dry goods instead of on an adjacent shelf where dishes are stored. Hopefully that answers your question.

Gary, I'm not sure. I've seen things where they are considered minor things to get 100 percent, but I'm not sure of the inspector's process.
